Baked Sweet Potato

I love, love, love sweet potatoes!  They are packed with vitamins A & C as well as immune-boosting and anti-inflammatory nutrients, and just down right taste like a party in your mouth!  See below for just one of the many ways you can prepare this superfood…

Ingredients:

  • 1 Sweet Potato
  • 1/4 cup extra-virgin olive oil, plus more for drizzling potatoes after cooked
  • 1/4 cup honey
  • 2 teaspoons ground cinnamon
  • Salt and freshly ground black pepper

Directions:

  1. Preheat oven to 375 degrees F.
  2. Lay the sweet potato on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potato. Roast for 25 to 30 minutes in the oven or until tender.
  3. Take sweet potato out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.
